Springtime Sippers For Every Occasion!
With Mother’s Day just behind us, that means Spring is in full swing! To celebrate, we figured a list of our favorite seasonal cocktails might put a little spring in your step. From breakfast bubbly to dessert daiquiris, we’ve got something for every meal of the day!
Pink Champagne Margaritas
This bubble gum pink drink is the epitome of spring! Jazz up your traditional mimosa with some tequila and pink lemonade. These are a refreshing way to wake up on a sunny Spring day.
- 1 cup champagne
- 2 cups pink lemonade
- ½ cup tequila
- ½ cup triple sec
- ¼ cup lime juice
- lime slices
- Toppings — sugar sticks rimmed with pink salt and/or sugar
Instructions
- Combine all ingredients.
- Rim glass with lime slice then dip in sugar or salt.
- Serve with sugar sticks.
Frozen Pineapple Margarita
This Margarita is perfect for warm spring days! We can picture ourselves on the patio here at the castle, soaking up the sunshine with one of these in hand. These are great for BBQs, lunch gatherings, or any daytime celebration.
- 2 cups frozen cut pineapple
- 1 cup orange juice
- juice of one lime
- ½ cup silver tequila
- ½ cup triple sec or other orange-flavored liqueur
- turbinado sugar or salt for glass rim
- lime & orange wedges for garnish
Instructions
- Combine pineapple, orange juice, lime juice, tequila, and triple sec in a blender and pulse until uniform. (If your margarita looks too thick thin with an additional ¼ cup orange juice.)
- Dip glass rims in a shallow dish of water, then into sugar.
- Garnish with lime and orange wedges.
Blackberry Vanilla Float
Save room after dinner for this float, which serves as a dessert and cocktail in one! Homemade blackberry syrup is pretty straightforward to make–or you could go the luxurious route and buy a bottle from Torani, like we did. The brilliant purple fades beautifully to pink when mixed with club soda. Pour gin or vodka and the blackberry soda over a scoop of vanilla ice cream, and garnish with a fresh rosemary stir stick.
- 2 cups Blackberries
- 1/2 cup Sugar
- 1/4 cup Water
- 4 cups Club Soda
- Vanilla Ice Cream
- Gin (or vanilla vodka)
- Rosemary and extra blackberries for garnish
Instructions
- In a large saucepan, bring berries, sugar, and water to a boil, stirring occasionally. Let cook for 10-15 minutes until juices are released. Press through a fine mesh sieve into a bowl and let cool completely.
- Mix the blackberry syrup with the club soda.
- Place one scoop of vanilla ice cream into a glass. Pour your liquor of choice over top of your ice cream, top with blackberry soda, and garnish with rosemary and an additional berry!
